On the Measurlng Method of Fatty Acids

The experiments were conducted with the free fatty acids, the slight quantity of free fatty acids contained in organic substances was able to be measured by applying the chelate method. For the measurement of free fatty acids, the test material was extracted with 80% ethanol and after it was neutralised with diluted solution of sodium hydroxide. A known density of calcium was added and combined with free fatty acid-salt. Indicator was added next and the remaining calcium, which would not combine, was titrated with 2-sodium ethylenediamine-tetra-acetic acid. It is necessary at the same time, to add a known density of calcium only, and hold a blank test without the use of test material. The quantity of fatty acids is calculated and indicated as the quantity of caproic acid. Therefore the quantity of calcium combination can be accepted as 25.8.
