The authors have made the fundamental studies on the Natsudaidai-juice manufacture,and the following results were obtained: (1). Changes in the chemical compositions and the growth during the ripening period on the tree. These results are shown in Tables 1 and 2. (2). Constitution of organic acid in the juice. These results are shown in Tables 4,5,6 and 7. The experiments were done according to the method of Franzen's esterification and paperchromatography. (3). Changes in the organic acids in the juice during the growing period. These results are shown in Table 8. (4). Changes in the chemical compositions (especially total suger, reducing suger, methylpentose, pentose, pectin and acid) of the juice during the overripening period. These results are shown in Tables 9 and 10.
