内容記述(抄録等)Each of the four kinds of anti-oxidisers of fat and oil was added to a pure water solution of LAA; all of them were mixed and added to another pure water solution of LAA; all of these anti-oxidisers and PPS were mixed and added to a third pure water solution of LAA. Each liquid was heated at 60℃. for 60 minutes, and the effects of these processes on the preservation of LAA from oxidation were compared and examined. Besides, only ethanol was added to a pure water solution of LAA and heated in the same condition, and the effect of ethanol on the preservation of LAA from oxidation was examined. As the result, the following facts were observed. (1) The anti-oxidisers of fat and oil, BAA, PG, IG, EPG, had the effect of preserving LAA from oxidation. IG was slightly more effective than any of the other anti-oxidisers. (2) When any two kinds of anti-oxidisers were mixed and added to a solution of LAA, the effect of preserving LAA from oxidation was not particularly great, in comparison with the effect which a single anti-oxidiser had on the preservation of LAA; but the addition of EPG mixed with IG was relatively efficient. (3) The use of an anti-oxidiser, especially, EPG or BHA, mixed with PPS was more effective in the preservation of LAA than the addition of either a single anti-oxidiser or PPS. (4) The addition of ethanol had a considerable effect on the preservation of LAA from oxidation.
